The monsoon process consists of exposing natural coffee beans to moisture-laden monsoon winds in well-ventilated brick or concrete-floored warehouses that are four-to-six inches thickness. This process is carried out on the West Coast of India through the use of the Arabian Sea winds during the Southwest Monsoon months of June through September.
